The detail
Terroir is a washed Gesha from Finca Deborah, designed to express the growing conditions of Chiriquí. At 1900 MaSL, the focus is on clarity and structure, with processing kept deliberately clean to reflect both variety and environment.
This lot comes from Jamison Savage’s Partner Producer Program in Chiriquí, where carbonic maceration has been refined over several years. Drawing from techniques used in winemaking, the focus is on controlled fermentation to shape flavour while preserving the clarity expected of high-elevation Gesha.
"We continue to work closely with Jamison Savage, whose approach to processing and quality has helped shape some of the most progressive coffees in the industry."
Davide Orazi, Projects and Community Manager.
"WatchHouse understood what this pairing could show. Two distinct expressions of Gesha, shaped by process and presented side by side.”

Jamison Savage.
Jamison Savage is one of the most recognised producers in the world. After moving to Panama in 2008, he established Finca Deborah, an extreme-elevation farm dedicated to shade-grown Gesha. His work is known for exacting farm standards, advanced processing and a clear focus on terroir.
This limited box brings together two expressions of that approach: one washed, one carbonic macerated washed. Both rare. Both precise. Best tasted side by side.
