The detail
Since 2018, 36 farming households have worked with Comma Coffee and NGO partners to revive quality-focused coffee production in this remote area. Once home to subsistence cassava farming, the region is now rebuilding its coffee legacy with increased income and long-term sustainability.
Cherries are selectively handpicked, partially pulped, and dried slowly with mucilage intact to develop sweetness and structure. This process means the coffee is bright and layered and reflects the momentum building in one of Asia’s emerging origins.
The honey process here is handled beautifully - clean fruit character, controlled drying, and structure that holds all the way through.
