This season’s new menu sees the arrival of dishes that are destined to become favourites. One of these is the chocolate and cherry French toast. A natural pairing, and one apt for the shift in seasons. Rich in colour, texture, and taste. A dish that deserves time, made for the moments between.

In our kitchens, it comes to life with the care and intention that defines everything we do. ​

It begins with the brioche – soaked in custard before being baked until golden. Patience is part of the process. Crème fraiche is placed across its surface, holding its shape against the warmth of the brioche beneath it.

From there, the remaining ingredients are introduced. House granola scattered for texture. A quenelle of chocolate cremeux placed at the centre, finished with salt and cocoa nibs. Fittingly, amarena cherries are last to appear.​
