At WatchHouse, every ingredient we serve is carefully chosen, not just for what it is, but for how it performs in the cup. Matcha is no exception.
We’re introducing matcha at WatchHouse, treated with the same care and precision as our coffee. Sourced from Kyoto, Japan - the birthplace of matcha - our selection is rooted in craft, terroir, and tradition. Shade-grown, hand-picked, and stone-milled, it reflects everything we value: depth, clarity, and balance.
Sourced the right way.

For centuries, Kyoto has been at the heart of matcha production. The soil, climate, and precise cultivation methods have been passed down through generations, shaping the finest matcha in the world.
Much like coffee, the quality of matcha is determined by where and how it’s grown. The best matcha comes from plants that are shade-grown for the final weeks before harvest, a process that slows growth, increases chlorophyll, and develops the deep umami and natural sweetness that define exceptional matcha.
Once harvested, only the top, most delicate leaves are selected. They’re steamed, dried, de-veined, de-stemmed, and ground into a fine powder using traditional granite stone mills, a slow process that prevents heat from affecting the tea’s flavour. The result? Matcha that’s intensely vibrant, smooth, and complex. This is the matcha we serve at WatchHouse.
Prepared the right way.
Rather than treating matcha as a single ingredient with a one-size-fits-all approach, we’ve selected two distinct expressions, each designed for its intended drinking experience.
Miruku – crafted for milk.

Smooth, full-bodied, and blended for balance. Miruku is designed for milk-based drinks, offering a matcha experience that’s rich yet delicate.
Its shade-grown leaves develop a complex, layered profile, with natural salted caramel, green bean, and elderflower notes that shine when paired with milk. The result? A matcha latte that’s deeply satisfying, beautifully balanced, and never overpowering.
Available in-house as a Matcha Latte and Iced Matcha Latte.
Mizu matcha – made for the purist.

Deep, complex, umami-rich. Mizu is designed to be enjoyed in its purest form - whisked with water, smooth and velvety.
This matcha offers roasted chestnut, sweet kombu, and dark chocolate notes, each sip building in depth and complexity. It’s an expression of matcha as it was meant to be enjoyed: refined, balanced, and layered.
Available in-house as Matcha tea.
An ingredient, not an afterthought.

At WatchHouse, we don’t add things to the menu for the sake of it. We add them when we know we can do them properly.
This is matcha selected with the same intent as our coffee, prepared with the same precision, and served with the same expertise.
