Earlier this year we travelled to Panama to spend time with the producers behind some of the coffee in our Rarities collection.
Exceptionally rare.
Rarities is where our rarest and most exceptional coffees sit, portioned and frozen at peak flavour.
Panama gives us a lot of them. Two farms a few kilometres apart can have completely different microclimates, so the coffee changes across very short distances.
Panama runs east to west rather than north to south, so winds arrive from either side, and Volcán Barú has left volcanic soil across the region. Producers here talk about that terroir as a gift, and the work is done to show it rather than change it.
Finca Deborah sits higher, at approximately 1,900 metres, an elevation most thought impossible for coffee. The coffee is forest grown under a canopy of indigenous trees, and the approach is to work with the ecology rather than clear it.
