- Brewer
- Filter papers
- 16gr of coffee
- Coffee mug or server
- Scales
- Timer
- Grinder
- Kettle - ideally a gooseneck kettle
- 250ml of freshly boiled water
Preparation.
- First, place a filter inside your brewer on top of your mug or server.
- Rinse the filter with some hot water, then discard the water from your mug.
- Add 16 grams of freshly ground coffee into your brewer.
- Set the water temperature on your Kettle to 96°C
- Place your brewer and server onto your scale and tare to zero.
Blooming Phase.
- First, start the timer and pour 50gr in a circular motion, making sure you cover all of the coffee grounds evenly.
- Take your brewer and gently swirl it to ensure your coffee has been fully saturated.
- Allow it to bloom for 30 seconds.
Brewing Phase.
- At 40 seconds, add an additional 100gr of water poured in a spiralling motion, starting in the centre and working out to the walls of the brewer.
- At 1:20, pour the remaining 100gr of water, using the same pouring technique as the previous step.
- Your brew should be ready at around 2:30m.
- Remove brewer from your mug or server, give it a stir and enjoy.
