At 19, Enrique Romero Chacón founded Tributos del Ota, his family’s micromill in the hills of Santa María de Dota. Built with the help of his parents and brothers, it marked a shift from commercial farming to quality-focused, small-scale production. The name is a tribute to the Ota chieftain and to the generations of farmers who shaped the region.
This lot was grown on their farm Don Joaquín and processed as a classic honey. Cherries are picked at peak sugar content, sorted by hand and density, then dried slowly on raised beds. It’s careful, deliberate work with a clear intent.
We love working with Enrique due to his passion for innovation and quality. This lot is a field blend of different varieties from their farm, processed as a classic Honey, lending it sweetness of dried fruit and dark chocolate.
