Santiago Patiño represents a new generation of Colombian producers. At Finca El Ocaso in Salento, his approach blends tradition with sharp innovation - building his own supply chain, opening the farm to visitors, and roasting on site. This natural-process Caturra begins with meticulous cherry selection, defect removal by flotation, and 48 hours of sealed-tank fermentation. Low-heat mechanical drying follows, preserving clarity and amplifying sweetness. The result is bold, clean and fruit-forward, with a depth that speaks to Santiago’s careful, considered craftsmanship. Every decision on the farm is intentional, made with quality in mind and sustainability at heart.
Santiago is an ambitious third-generation producer who embraces the spirit of innovation in specialty coffee. His natural Caturra is a great example of this, boasting a fruit-forward and rich profile.
