Masuvi is a post-harvest experiment from Mió, crafted using floaters (cherries that dried on the tree during extreme heat). To recover quality, they underwent 72 hours of sealed-tank fermentation with Saccharomyces cerevisiae yeast, boosted by glucose and fructose to enhance fruity sweetness, vibrant acidity, and a juicy texture.

 

Dried on raised beds and rested for up to 85 days before milling, Masuvi is a precise, controlled process designed to recover from a difficult harvest. It’s a reflection of Mió’s belief in process as potential - transforming climate-challenged cherries into something delicious.

 

Masuvi is the result of Mió's research and innovation. Last harvest, unusually hot weather resulted in a huge harvest loss. Using this process enabled the team to create a delicious coffee despite the circumstances.
