Jhonatan and Johan Gasca grow and process Pink Bourbon at their family farm in Bruselas, Huila. Working under the name Zarza Coffee, they’ve shifted from volume to quality: producing precise, small-scale lots that highlight their region’s potential. This lot is grown at 1750 MaSL and picked for peak sugar development
Processing involves double anaerobic fermentation, first in cherry, then post-pulping, followed by a thermal shock wash: hot water opens the bean’s pores, cold water seals flavour in. It’s a structured, vibrant cup, with blood orange acidity, caramel sweetness and soft spice. Complex, expressive, and a standout example of Pink Bourbon.
Zarza Coffee is an innovative coffee business rooted in generations of Colombian coffee production. This Pink Bourbon combines the best of both worlds and showcases coffee, processed in a modern way.
