This lot was produced by smallholder farmers in the Chelbesa village of Yirgacheffe, and processed by SNAP at their Danche wet mill. The mill, operated by Negusse Debela, focuses on quality-driven small lots and experimental processes like this red honey, chosen for its bright acidity and the clarity it brings to the cup.
At 2200 MaSL, Chelbesa is densely forested and rich in native varietals like Wolisho and Dega. Cherries are handpicked, sorted, and pulped before being dried with a layer of mucilage left on. The result is structured, fruit-forward, and a standout expression of its highland origin.
Ethiopian coffee has a reputation, but this lot goes beyond. Red Honey brings a new layer of citrus and fruit complexity.
