Aquiares Estate is Costa Rica’s largest coffee farm, sitting on volcanic soil in the Turrialba region. Founded in 1890 and revitalised by Alfonso Robelo in the 1980s, it remains a model of community-based, sustainable agriculture. Today, Alfonso’s son Diego leads the farm with a focus on innovation and carbon neutrality.
This lot features H17 - a hybrid of Caturra and Ethiopian landrace varieties - processed as an anaerobic natural. Whole cherries are sealed in tanks before drying, producing a fruit-forward cup with layered complexity. It’s a bold expression of Aquiares’ forward-thinking approach and a rare variety not often seen on menus.
