The Lopez family's Lacia farms, situated in Quindio, boast a rich coffee legacy spanning generations. Nestled within a picturesque valley with varying microclimates, Lacia produces diverse coffee profiles. Manuel Lopez, owner Jairo's nephew, leads the unique fermentation program. They pick ripe, overripe, and underripe cherries, believing that, with proper processing, each contributes unique flavors to the final cup. Cherries are categorized to determine oxidation and fermentation durations. This Castillo lot, picked at perfect ripeness, undergoes 24-hour oxidation in plastic bags before slow drying in shaded rooms, allowing aromatic exchange with other varieties. Manuel likens drying coffee to a sponge meaning it absorbs the unique aromatics from adjacent Java & Gesha varieties strategically placed in the shaded rooms, enhancing flavor complexity.
