This exclusive community lot was crafted for WatchHouse by Cata Export, sourced from various producers in the town of Saladoblanco. After being handpicked at peak ripeness, the cherries undergo machine selection and pulping, followed by 12 to 24 hours of aerobic fermentation in a cement tank. The beans are then lightly washed to remove the mucilage and sun-dried for 15 to 20 days, with frequent turning to ensure even drying.
To minimise waste and maintain quality, Cata Export utilises a specialised dry-milling facility, employing pixel and density sorting, along with screen size selection. The final product is a washed lot, scoring 84.5 SCA points, and offering notes of peanut butter, plum, and a touch of citrus—a true representation of the distinctive profiles from Huila.
