Brazil has a deep-rooted coffee tradition and is the largest producer globally. For years, innovation in coffee production was minimal due to the industry’s massive scale. Mió Fazenda, located in the South of Minas, is one of our key partners and has committed to pioneering new processing methods, setting themselves apart from traditional producers in the region.
This washed Catucaí batch is an excellent example, as coffee in Brazil is usually processed as natural or pulped natural. The washing process, involving a short 36-hour fermentation, results in a cleaner profile in the cup, offering a softer and more delicate taste than typical Brazilian coffee.
