This coffee comes from the Huila region in Colombia and is produced by different producers in this region.
Producers Rigo, Teodolfo, Jairo Hoyos, Fausto, Nestor Lasso, Jhoan vergara and Jhonatan Gasca took part in selecting their Caturra-Colombia varietal to follow the same harvest methodology and fermentation protocol.
- Step 1. Manual collection of ripe cherries from specific farms in the Department of Huila.
- Step 2. Oxidation for 24 hours and pulp.
- Step 3. Extended fermentation in anaerobic tanks, some fermentations are 36 hours.
- Step 4. Directly drying according to weather, 10-15 days.
