What are your first memories of food?
Camping holidays in France with my family and going for one meal out as a treat. Menus full of things I didn’t have a clue what they were but I always found myself choosing something adventurous. I also have a really vivid memory of the first time I tried snails at a beautiful restaurant my Grandad took me to whilst on a trip to Paris. The whole dining experience was like nothing I had experienced before.
How did you find yourself cheffing?
Probably like quite a few chefs I fell into it a little bit. I helped a friend on a pop up in a restaurant built out of scaffold poles on Riley road, Dalston. The dining space was above the kitchen, with a table on a pulley system. The guests got to look down into the kitchen and see their dishes plated up before the table was raised back up for them to eat. I loved the whole experience and the following summer, took a bit of a leap and left my management job in retail and started out as a kitchen porter doing a bit of prep and baking at the restaurant where the same friend was Head chef.

What is your go to comfort food or favourite dish?
Roast dinner I would eat all day every day!
What do you do to relax in your spare time?
Enjoy family time with my wife and son.
What motivates you?
I want to do my job to the best of my abilities every day. That means looking to constantly improve and learn to deliver amazing food to WatchHouse customers that all of our staff can be proud of.
What is the best piece of advice you’ve ever been given?
Cheesy one but -do what you love, love what you do.
Favourite WatchHouse coffee?
I’ve been enjoying Gitega Hills on filter and the chaff from it has been making amazing chaff syrup for our menu.
What traits do you treasure in other people?
Passionate about what they do, supportive of those around them and an eagerness to learn and develop. And most importantly a sense of humour.
